Beneficial properties of wine
 Propiedades beneficiosas del vino

Moderate consumption of red wine regularly can prevent heart disease and certain forms of cancer. The chemical components that are believed to be responsible for this preventive effect of the wine are catechins, also known as flavonoids and related tannins. The catechins present in wine act as antioxidants, which prevent molecules known as "free radicals" can damage cells. One particular form of flavonoid called oligomeric procyanidin, it has recently been shown to prevent atherosclerosis.

There are also compounds in grapes and wine (especially red wine, grape juice, dark beers and tea, but absent in white wine, light beer and spirits) called resveratrol and quercetin. The clinical and statistical evidence and laboratory studies have shown that benefit the immune system, and possibly protect against heart disease and even prolong life.

Wine pairing

With fish

Fish dishes with white wine will be the perfect companion, mild white fried fish, baked with a white body with aging or barrel fermentation, dry, with moderate acidity. But with firm-fleshed fish such as monkfish, cod, tuna and lamprey may be accompanied by a young red.

With shellfish and crustaceans

White wine is still the best companion, dry or very dry, you can also add sparkling wines that accompany exceptionally to oysters, and even a pink dry champagne. Galician wines and Ribeiro, Valedoras, along with rueda wines are accompanying well with  scallops.

With meat

The red wines are the best option, accompanied by an exceptional red meat, and roasts. For stewed or seasoned meat will need a wine that enhances the flavors hidden in the flesh, this is a reserve wine, like Ribera del Duero, Rioja, Toro, etc.

With giblets

Whether they are braised with onions or garlic sauces, we will accompany it with fruity wines, Priorat, Mancha, Valdepeñas ... but in a creamy sauce with mushrooms it may be accompanied also with older wines, less robust and more velvety.

With small game hunting

The wines are not very old, powerful, tannic, the ideals of Garnacha and Tempranillo, while some large reserves well tempered by oak. The recipes seasoned with herbs are also accompanied with light aging red wines, but direct style, Toro, Ribera del Duero, Jumilla, Navarra, etc.

With big game hunting

With the wild boar, roe deer, fallow deer meat ... which are very fragrant and have strong flavors with fine red wines that accompany very solid and strong, reserve red wines of Penedes, Somontano, etc.. And as the texture and force of the plate decreases, we will opt for more aged wines, tannins softer, less energetic.

With desserts

The champagnes, wines and semidry champagnes, including muscat, smelly, and Pedro Ximenez, and if the dessert is very sweet, the perfect companion will be a good brandy, cognac, armagnac, etc..

With cheese

Depending on the type of cheese, but if you don't know the best option is to accompany the cheese with the wine of the same geographical area. But a spicy cheese requires a light and refreshing wine, cheese intensely flavored from sheep must be accompanied by a red ripe and full bodied, very fatty cheese by fruity wine with some acidity, soft cheeses with wines less aggressive, velvety even white-bodied, blue cheeses with white wine, full bodied, but keep in mind that there are plenty of cheeses, both cured and fresh, so that practically there is a type of cheese for each type of wine.
